According to <a href="http://www.chemistryquestion.com/English/Questions/ChemistryInDailyLife/17c_salted_boiled_eggs.html">Dr. Yukinori Yoshimura</a> who is an expert on reproduction of birds, you are correct. Click on his link for more information for your experiment.

According to my understanding and experience, eggs become water permeable when boiled, i.e., micro-fissures are created in the shell.

Whether I'm correct about this or not, your experiment would technically only answer the question of whether boiled egg shells are water permeable. A possible experiment to determine whether unboiled egg shells are permeable would be to soak uncooked eggs in water with food coloring for a few days, then crack them open.

I'm a grown man and I have no idea I could have had done this when I was a kid.

I would certainly pass this along to my little cousins starting out in school. Maybe they can put this to good use and it could awaken in them a strong love for science.
